Guilt Free + Gluten Free Thanksgiving Dishes

After years of searching for the perfect semi-healthy dishes, I’ve found two that I keep coming back to. Baked Potato Eggs and Smushed Apples and Sweet Potatoes are my FAVES. Not only will they have you reaching for seconds (and thirds..) but they are incredibly easy to make and healthy! This year, I wanted to relieve some of the pressure put on us mamas and give you all the recipes to these guilt free and gluten free potato dishes.

Baked Potato Eggs

Ingredients:

  • 2 baked potatoes
  • 2 tablespoons butter
  • 1/4 cup grated parmesan
  • 4 large eggs

Directions:

  1. Heat oven to 400° F
  2. Scrub potatoes and pierce using the tines of a fork
  3. Cut each potato in half and scoop out the insides and set aside
  4. Add the butter and cheese to the potato insides and mix
  5. Spoon the mixture back into the potato halves creating a hallow in the middle
  6. Bake an egg into each center and arrange on a baking sheet
  7. Cook for 10-15 minutes

 

Smushed Apples and Sweet Potatoes

Ingredients:

  • 2 large sweet potatoes- peeled and diced
  • 2 tablespoons of butter
  • 1/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1 granny smith apple- peeled, cored and diced
  • 1/8 cup milk

Directions:

  1. Place the sweet potatoes in a medium saucepan and fill with enough water to cover the potatoes
  2. Bring to a boil, then reduce heat to medium and simmer for 2o minutes or until tender
  3. Remove from heat and set aside
  4. Melt butter in a small saucepan over low heat and mix in sugar, cinnamon and allspice
  5. Add the apple slices, cover and let simmer for 5 minutes or until tender
  6. Mash together the apple mixture, butter and sweet potatoes while gradually adding the milk
